Pumpkin Poriyal

This is a Tamil Nadu recipe of pumpkin side dish, which is prepared and cooked similarly to the Carrot Poriyal.’  😊 The good news is, you can use any type of pumpkin you desire. I made this recipe with the butternut squash as it was available to me in a local shop.


Preparation time-10 min

Cooking time- 15 min


  • Non-stick deep pan with a lid
  • Sharp knife


  • 2 cups of cubed Pumpkin (I used butternut squash as seen in the picture but you can use any type of pumpkin available to you)
  • 1/3 tsp of Turmeric Powder
  • 1 tsp of Garam Masala Powder
  • 1/3 tsp of Sambar Powder or Red Chilli Powder
  • Water for steaming
  • Salt for seasoning
for tempering:
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad dal
  • Drops of Olive oil


  1. Cut the pumpkin in half, deseed it and cut it into cubes
  2. In a deep non-stick pan temper the mustard seeds with urad dal and cover with a lid. Wait till the mustard seeds start popping
  3. Add cubed pumpkin to the pan and stir around for 2 minutes
  4. Add the spices to the pumpkin (turmeric powder, garam masala and sambar/ chilli powder) and stir around
  5. Add enough water to the pan so it fully covers the pumpkin
  6. Turn on high heat and wait till the water starts to boil. Switch to a medium heat and cover with a lid
  7.  When the water has disappeared, stir the pumpkin around and fry it for a bit
  8.  Season the pumpkin poriyal with the asalt
